CINNAMON COOKIES
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar

  • 1 egg + 1 egg yolk

1st  take In a small bowl, whisk together the Kashmiri chile, fennel, ginger, asafoetida, and ½ cup water to make a paste. In a spice grinder, grind the cumin, green cardamom, mace, and cinnamon into a powder.

2nd step

Take a  Dutch oven and  set it over medium-high heat, then add the ghee and black cardamom and cook until fragrant, upto 1–2 minutes. Season the lamb slowly  with salt and, working in batches, fry it in the ghee, turning once or twice, until browned,it can take upto  5–7 minutes. Stir it  in the saffron, reserved paste, and 2 cups of water. When the liquid boils then turn the heat of the oven to medium-low, cover, and cook, remain stirring normally , until the lamb is tender, wait for about 55 minutes. keep stirring  slowly  in the reserved spice powder, cover, and cook,  until the lamb is very tender, for about  40–45 minutes. Garnish it with the cilantro, and serve.

  • 2 1/2 pounds  bone-in, skinless chicken thighs, and drumsticks
  • 2 teaspoons kosher salt, divided
  • 2 juicy lemons
  • 3/4 cup plain yogurt
  • 1/2 medium onion, peeled and quartered
  • 5 garlic cloves
  • 1 (3/4-inch) piece fresh ginger, peeled and quartered
  • 1/2 fresh hot green chile, roughly sliced
  • 2 teaspoons garam masala
  • 1/2 cup unsalted butter (1 stick), melted
  • Lemon wedges

Directions

  1. Make 2 diagonal incisions,which is on each side of chicken piece is 1 inch long .
  2. Place chicken pieces on a rimmed baking sheet. Squeeze 1 lemon over chicken, and sprinkle it slowly with salt. Gently rub salt and lemon juice into slits. Turn chicken over, and repeat the process.take a gap of 20 minutes .
  3. Blend yogurt, onion, garlic, ginger, green chili, and garam masala in a food blender into a smooth paste,do it for about 3 minutes. Transfer spice paste to a large bowl. Add chicken to bowl now and turn until coated evenly  and completely in spice paste, being sure to get paste into slits. Cover chicken and keep it in refrigerater for  at least 5 hours, up to 24 hours.
  4. Heat charcoal grill to high. Grill chicken over moderately high heat, with much care and basting with butter, until its colour become browned, 10 minutes. Turn and cook, basting with remaining butter, until you feel that it lightly charred and cooked through, about 12 minutes. Now Squeeze lemon wedges over chicken and enjoy with naan.
